I LOVE living where we have four seasons. Fall and winter are my absolute favorite seasons because of recipes like this one that give you a warm hug in the morning.
This is my “go to recipe” when we have overnight guests. This recipe involves a little bit of work the night before, but it is SO worth it the next morning!

Start your homeschool day with a delicious and filling breakfast. It gives you a warm hug on a chilly day. This can feed a large family or keep your family fed for a few breakfasts.
Ingredients
- 1 French baguette cut into cubes, left to dry out
- 1 package cream cheese 8 oz
- 1 cup blueberries fresh or frozen
- 12 eggs
- 2 cups milk
- 1/2 cup maple syrup
Blueberry syrup
- 1 cup sugar
- 1 cup water
- 2 TB corn starch
- 1 cup blueberries fresh or frozen
- 1 TB butter
Instructions
- Preheat oven to 350 degrees. Place ½ of bread cubes in a greased, large lasagna dish. Cut cream cheese into small cubes and space out all over bread. Top with blueberries and remaining bread.
- In separate bowl, beat eggs, milk and syrup. Pour mixture over bread. Make sure everything is moist. Cover with foil and chill for a few hours or overnight.
- Remove from fridge 30 minutes or more. Keep foil on and bake 35 minutes. Uncover, and bake 25-30 minutes until center is firm and surface is lightly browned.
Blueberry sauce
- In a saucepan, bring sugar, cornstarch, and water to boil over medium heat. Boil 3 minutes stirring constantly. Add berries. Reduce heat. Simmer 10 minutes. Add butter.
