Best Banana Bread Ever

If your homeschool day was bananas, then it’s time to make the best banana bread ever!

I call this a “breakfast recipe”, but you can eat it any time.

Let me confess…I like to call a lot of foods “breakfast foods” so that I can eat them as soon as I get up.

Read: the day after Thanksgiving I can justify apple pie and pumpkin pie as “breakfast foods”!

So, I’ll let you decide when you should eat this recipe. No judgment here.

What I LOVE about this best banana bread ever is that it uses very little oil and uses applesauce instead. Yum!

And here’s my secret, I buy the individual serving sizes of applesauce specifically for this recipe. That way, I always have the ingredients ready for when my bananas start to turn brown.

Best Banana Bread Ever

This is the most delicious banana bread recipe
Prep Time 10 minutes
Cook Time 50 minutes
Course Breakfast
Servings 8

Ingredients
  

  • 3 ripe bananas
  • 1/2 cup applesauce
  • 4 egg whites
  • 1 tsp vanilla extract
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 cups all-purpose flours
  • 1 Tbsp ground cinnamon
  • 1 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 cup vegetable oil

Instructions
 

  • Lightly grease a 9 x 5 inch loaf pan.
  • Using an electric mixer, mash the bananas. Add the applesauce, egg whites, vanilla, and both sugars.
  • In a medium bowl, mix the flour, cinnamon, baking soda, and baking powder. Slowly add the banana mixture to the flour mixture and stir until just combined, then stir in the oil gently, until just blended.
  • Bake for 50 – 55 minutes in 350° oven. Cool for 15 minutes before serving.

  • 1/2 cup chopped pecans
  • 1/2 cup of chopped walnuts
